As soon as the bees have absorbed the nectar from the flowers, enriched it and deposited it in the open honeycombs, fermentation and drying begins. After the fermentation and drying process to a water content of only 20%, the sugar content has risen to approx. 80%. As soon as the bees have closed their combs, all processes have passed and the honey has matured. Only now does the first human intervention take place: the Horo di Norcia multi-flower honey is flung out of the honeycomb by a beekeeper and bottled.
